Across 245 capital cities with a complete daily weather record going back to 1976, beer on average goes flat faster than it used to: the hottest month's average daily high now runs 23.4°C, against 22.1°C in 1976 to 1986, a typical capital's beer fizz-loss index of 53.4 out of 100. In 243 of those capitals the hottest month has warmed, and in 2 it has cooled, so this is not a single global trend but a redistribution. Note: this measures the change against that same capital's own past, not where beer goes flat fastest today in absolute terms. The increase is nowhere bigger than in Chișinău, where the hottest month is up 2.9°C to 16.6°C, a fizz-loss index of 58 out of 100. New Delhi's hottest month cooled the most, to 30.4°C, but simply being that much hotter still means beer there goes flat faster than in Chișinău.
The four capitals with the biggest increase since 1976-1986, and the four with the biggest decrease, where beer's flattening has slowed the most compared with its own past.

Why does beer go flat faster in warmer weather?
Dissolved CO2 in a cold drink falls with temperature (Henry's law), and the real relationship isn't a flat rate: it follows the standard temperature coefficient for CO2 in water (2400 K, from Sander's 2015 compilation of Henry's law constants), so the same warming counts for a different amount depending on the actual temperature it happens at, not just its size. Applied to each capital's own hottest-month average daily high, then versus now, the result is a 0 to 100 dial where 50 means unchanged from that same capital's early window: a number above 50 means today's hottest month is warmer, so a beer left out on a terrace now goes flat faster than it did a generation ago.
In which city has beer started going flat the fastest?
Chișinău, Moldova, the biggest increase of any capital measured, not necessarily the hottest overall: its hottest month now averages 16.6°C, up from 13.7°C in 1976-1986, putting its fizz-loss index at 58 out of 100.
Is beer going flat faster everywhere?
No. Of the 245 capitals measured, 243 have a warmer hottest month than they did in 1976-1986, pushing their index above 50, and 2 have a cooler one, pulling their index below it. A capital below 50 is not one where beer stays fizzy forever, it is one whose hottest month has, on this record, not warmed as much as its early window already implied.
Where does this beer data come from?
Daily temperature readings from the ERA5 reanalysis, retrieved through the Open-Meteo historical weather API and stored in full. Every capital shown here has a complete daily record back to 1976; capitals whose backfill is still running are left out entirely rather than shown with a partial figure.
Does this predict exactly how fast my own beer goes flat?
Not precisely, and here is the honest limit of what this page can say. It measures the real physical relationship between temperature and CO2 solubility (Henry's law): how much less carbonation a beer's own climate lets it hold onto, not a stopwatch measurement of any one glass. As a rough illustration only, not a measured rate: if a well-chilled beer commonly stays noticeably fizzy for around 25 minutes in cool weather, Chișinău's hottest month is now roughly 8% less able to hold onto that CO2 than in 1976-1986, which under that same simple assumption would shorten the window to somewhere around 23 minutes, not seconds. Published research on the actual speed of CO2 escaping into visible bubbles (Liger-Belair et al., PLOS ONE, 2012) found that a champagne's serving temperature made essentially no measurable difference to that rate once glass shape, nucleation sites and pour turbulence were in play, so no well-established formula converts solubility into an exact number of minutes for any one drink. What this page measures consistently across every capital is the solubility change itself, the same way every fact in this ledger uses one fixed, published method rather than a method tuned per city.

How this is measured
Dissolved CO2 in a cold drink falls as its temperature rises (Henry's law), following the gas's real temperature dependence rather than a flat per-degree rate. Each capital's fizz-loss index converts its hottest-month average daily high, in kelvin, then versus now, using the standard coefficient for CO2 in water (2400 K, per Sander's 2015 compilation of Henry's law constants), over two 11-year periods, 1976 to 1986 and 2015 to 2025. The result is clamped to a 0 to 100 dial where 50 means unchanged from that early window.
Unlike most facts in this ledger, this one is measured against each capital's own past rather than a fixed reference temperature. That is why the table on this page ranks and shows the two hottest-month temperatures behind the index instead of the index's own "then" and "now": by definition, the index always starts at 50 for every capital's early window, so only the temperatures themselves, and the index they produce today, vary in a way worth ranking.
That is also a deliberate limitation worth stating: this formula captures the equilibrium chemistry of temperature and CO2 solubility, not a controlled measurement of any single glass. It does not account for the drink's starting carbonation, its container, direct sun or how long it actually sits out. Read this table as a description of how much hotter each capital's warmest weather has become, and what that means for CO2 solubility, not as a precise timer for any one beer.
